White Sauce Pasta with Brocolli

The recipe below is one of those quick-to-make pasta recipe. The complete process including boiling the pasta, making the sauce and mixing both together takes approximately 30 minutes.



Ingredients:
all purpose flour
1 tbsp butter
1-11/2 cup milk
fettuccine pasta
olive oil
thyme
oregano
salt and pepper to taste

Procedure:
  • Boil water in a large vessel, add the pasta and a little bit of olive oil and salt to it. Keep the lid open and let it boil for about 8-10 minutes or until the pasta looks like shown below.


  • Simultaneously start making the white sauce on low heat. Now one thing that has to be kept in mind while making it is that all of it is a continuous process. If it is over-cooked, the sauce will suddenly change colour and will become brown.
  • Put the butter and the flour in the pan and stir it constantly. Boil the milk in the microwave and keep ready to pour in the pan.Once it changes colour or when it becomes yellow-ish, add the milk while stirring constantly. If the sauce is a little lumpy or thick, add little hot water to it.


  • To the sauce, add salt and pepper to taste. Season it with a little bit of thyme and oregano.

  • Put the boiled pasta in a sieve and run it through cold water so that the pasta doesn't stick to each other.

  • Add the pasta to the sauce and mix it together gently. 

  • In a separate pan boil small pieces of broccoli until slightly cooked.

  • Mix the broccoli with the pasta. 
  • I added 2 types of cheeses- cheddar and mozzarella. So add the cheese/s and heat it a little bit it is ready to serve !
